My Toscano Soup

You need :
1 large box instant mashed potato's
or 5 cups left over real mashed potato's
half gallon milk
1 package breakfast bulk sausage crumbled cooked and drained
1 small sweet onion chopped and cooked
8 or more red skin potatoes cooked and cubed
half package of bacon diced chopped then cooked
1/2 bag frozen kale ..or as good and cheaper 1/2 bag frozen spinach
( honestly you cant tell the difference so why spend more)
6 to 8 chicken base cubes
2 cups water /about half gal milk
1/2 stick of butter
large dashes of parsley flakes
mrs dash, salt , pepper ,onion powder, garlic powder, dill weed

In a big boiling pot ..make about 4 to 6 cups of instant potatoes
add butter,salt and some pepper
Just follow directions on box

stir till thick like mashed potatoes
now add 3 to 4 cups more milk/water (more milk then water )
and stir till you made it semi thin base
add large dashes of ms. dash, salt, pepper ,garlic power, onion powder and dill weed
parsley flakes

leave on very low heat ..
add 8 chicken base cubes
stir as they cook down

now in a frying pan cook your sausage (crumbled)
add chopped raw bacon and your onion ..cook till all fully cooked
drain add to your mashed potato mixture

it will be thin if not add more milk
in micro ..cook 8 or more redskin potatoes ( can use any potato)
(poke holes in them to vent)
in mine it takes about 7 min to cook on high
remove if cooked and cube them up or slices
add to warming potato mixture

cook on low heat ..stir often
taste ..see if you need more seasonings ..its about what you like
if soup is to thin add a bit more mashed potato flakes to thicken it
the soup should be semi thin ..but also tastes good thicker too

add 1/2 bag frozen kale or I like even better (cheaper too) frozen chopped spinach

cook on low about another 15 minutes and serve
you can add Parmesan cheese as a topper
Easy to reheat ..soup may get very thick just add milk to thin it up and heat ..reserve

by the way this base (potato soup mixture) makes other great soups too ..like cheesy potato and broccoli and cheese ..any creamy base soup can be made easy this way even simple potato soup with ham
